Refreshing Diabetic Fluff

Posted Sunday, August 23, 2009, at 8:20 AM

Strawberry Fluff

2 (3 ounce) packages sugar free strawberry gelatin
1 (16 ounce) package fat free cottage cheese
1 (8ounce) container sugar free frozen whipped topping
1 (20 ounce) can of low sugar crushed pineapple drained
In mixing bowl combine the gelatin, cottage cheese, whipped topping and pineapple, mix together well, refrigerate until chilled and serve.

Some chopped pecans or walnuts are very good sprinkled on top.

Any flavor gelatin will work as well this can be made regular with just regular ingredients. It is a very versaltile recipe.

Try: peach jello and fresh peaches
orange jello and mandarine oranges
1 package rasberry gelatin and add frozen blueberries and rasberries
cherry gelatin and maraschino cherries cut in half
This is a favorite of ours because we can make it so many ways, is easy to change

It will work from prepared gelatin but tends to be kind of runny, so I just use the method in recipe.

Sorry I haven't posted in a few days, I had back surgery last Thursday so will be slow for awhile, thanks for your patience.

remember I want to hear from everyone out there also, I also interested in your recipes if you want to share them, you can send them to my email and i will post them also. kshipley57@yahoo.com

I began cooking at the age of 9 with my father and have always loved trying new recipes. Beware: I am fond of onions and peppers! I am diabetic so I do try to cook more healthy dishes these days. My door is always open to trying and sharing new recipes. Let's see what we can cook up with this blog!
