Yummy Diabetic Pies

Coconut and Chocolate Pies

1-1/2 cup Splenda (or equivalent)
1 12 oz. can Pet milk (can use fat free)
1 12 oz. can water (use Pet milk can)
3 Heaping tablespoons Corn Starch
4 Egg Yolks (save whites for meringe)
Cook until thick. Add
1/3 Cup (or 2/3 of stick) of butter (can use Light
butter)

1-1/2 Cup of Coconut
2 Teaspoons of Vanilla

Pour into baked pie shell. Add topping.

You can use the same basic recipe to make chocolate pies except use 2 cups of Splenda and 4 LEVEL tablespoons of cocoa.

I got this recipe from a cousin and it is wonderful. Hope you enjoy!! I have to take these pies to church every time we have a "pig-out" AND our family get-togethers.
