It's Dinner Time
Hello out there in the world of cooking. I sure wish I could get some of you to share some Recipes, Ideas or Wish List.
Again I have some different recipes, some were shared from a friend and most of them I have tried.
I will say on the Butterfinger Cake Recipe I posted last week..the other one with German Choc cake and Carmel Sauce is much better but then everyone is different.
Party Mix Maple Flavor
5 1/2 cups crispy corn and rice cereal
1/2 cup pecans, broken into pieces
1/3 cup maple syrup
3 tablespoons butter, melted
2 teaspoons vanilla extract
1/4 cup flaked coconut
1 tablespoon sesame seeds
In a 15-by-10-by-1-inch baking pan coated with nonstick cooking spray, combine cereal and pecans. Set aside. In a small bowl, stir together syrup, butter, vanilla extract, coconut and sesame seeds. Pour syrup mixture over cereal, tossing until well coated. Bake at 300 degrees for about 30 minutes, stirring twice. Cool completely. Store in an airtight container.
Mexican/Rotel Chicken
Cheese Doritos
3 Chicken Breast or 6 to 8 Chicken Tenders
1 can rotel
1 can cream of chicken soup
1/2 big box Velveeta
Boil chicken till done, either cut in chunks or shred, I always save my chicken broth in case I need some extra liquid when mixing or I put in butter bowl and freeze for noodles or something later. I try not to waste.
put layer of crushed Doritos in bottom of 9x13 casserole dish, add chicken. Mix rotel, cream of chicken together and pour over chicken, put velveeta on top of chicken. Put in 350 oven till it is hot and bubbly (cheese melted) take out and put another layer of crushed Doritos.
You can use the low fat soup and velveeta for this and it works just as good. Cream of Mushroom soup is also very good. I also always buy the low fat Velveeta, when all of this is mixed together you cannot tell the difference.
This is coming on Salad Seasoning and here is a good dressing recipe. Splenda can also be used. I also use Olive Oil for my recipes.
Lemon Poppy Seed Dressing
1/4 cup granulated sugar
1/4 cup fresh lemon juice
1 teaspoon dried minced onion
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
6 tablespoons vegetable oil
1 1/2 teaspoons poppy seeds
Combine first 5 ingredients in a blender or food processor and process for 20 seconds. With blender on high, gradually add oil in a slow, steady stream. Stir in poppy seeds.
Sugar Free 4 Layer Dessert
1. 1 cup flour
1/2 cup chopped nuts
1/2 cup margarine
2 tblsps splenda
Mix all this together it will be stiff and may have to finish mixing with hand. Spread in 9x13 pan, crust will be very thin and hard to spread out. Bake at 375 untill golden brown. Cool and go one to step 2.
2. 8 oz cream cheese..low fat
1 tub cool whip..sugar free
1/2 cup splenda
Mix this together and spread over cooled crust.
3. 2 boxes sugar free pudding..any flavor
3 cups milk
Mix together and spread over 2nd mixture.
4. 1 tub cool whip..sugar free
Spread over top of 3rd mixture.
Put in refrigerator till set.
Of course this can made with sugar also. At our family reunions this is one of the favorite Desserts. My Aunt Donna makes this with Lemon and it is delicious, chocolate is also very very good.
