This first recipe is good for hot weather because it is cooked in the crock pot as well as some others I will be sharing...no getting the kitchen hot.
Crockpot Italian Chicken
4 chicken breasts
1 packet Zesty Italian dressing seasoning
1 8 oz. cream cheese (softened)
2 cans cream of chicken soup or cream of mushroom soup will work
Cook on low for 4 hours. If sauce is too thick, add a little milk. Serve over pasta or rice..
Cauliflower Patties
1 head cauliflower
2 large eggs
1/2 c cheddar cheese, grated
1/2 c panko
1/2 t cayenne pepper (more of less to taste)
salt
olive oil
Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste.
Coat the bottom of a griddle or skillet with olive oil over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.

This next recipe is not a favorite of mine bur someone requested it, I found it on Pintrest along with some other fabulous recipes..
Cotton Candy Salad
1 can eagle brand milk
2 cups crushed pineapple, drained well
1 can strawberry pie filling
1 can cherry pie filling
12 oz. tub cool whip
3/4 cup pecans, chopped
Fold all ingredients together. Chill and serve
Slow Cooker Salisbury Steak
We love this recipe and it is so easy.
2 pounds lean ground beef
1 (1 ounce) envelope dry onion soup mix
1/2 cup Italian seasoned bread crumbs
1/4 cup milk
1/4 cup all-purpose flour
2 tablespoons vegetable oil
2 (10.75 ounce) cans condensed cream of chicken soup
1 (1 ounce) packet dry au jus mix
3/4 cup water
1.In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, and milk using your hands. Shape into 8 patties.
2.Heat the oil in a large skillet over medium-high heat. Dredge the patties in flour just to coat, and quickly brown on both sides in the hot skillet. Place browned patties into the slow cooker stacking alternately like a pyramid. In a medium bowl, mix together the cream of chicken soup, au jus mix, and water. Pour over the meat. Cook on the Low setting for 4 or 5 hours, until ground beef is well done.
