Cooking with Karen
I began cooking at the age of 9 with my father and have always loved trying new recipes. Beware: I am fond of onions and peppers! I am diabetic so I do try to cook more healthy dishes these days. My door is always open to trying and sharing new recipes. Let's see what we can cook up with this blog!

Mexican Corn Bread
2 c. cornmeal
1/2 c. sweet milk
3 eggs, egg substitute will work fine
1/2 c. oil/any kind
1/2 lb. sausage/bacon, cooked and crumbled
1 1/2 c. grated cheese
1 large onion/chopped
1 can cream style corn
3 hot peppers chopped
bit of garlic
mix all together and bake at 375 till lightly brown, be sure and don't overcook.
I perfer sausage and you can use turkey or pork sausage or bacon.
My mom always cooks in a long pan such as cookie sheet, it cooks better and not dry.
