Diabetic Delights
I thought I would share some diabetic recipes
Applesauce Muffins
1 1/4 cups Unsweetened Applesauce
1/2 cup Egg Substitute or 1 egg
2 Tbsp. Canola Oil
1/4 cup Honey
1 cup Whole-Wheat Flour
1 cup Flour
2 tsp. Baking Powder
3/4 tsp Baking Soda
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/3 Raisins
In large Bowl, beat together the applesauce, egg substitute, oil and honey.
Sift the dry ingredients, stirring just to moisten.
Stir in Raisins and divide the batter among 12 muffin cups coated with non-stick vegetable cooking spray.
Bake at 375 for 20 minutes.
(12 servings/serving size= 1 muffin)
Surgar-Free Whipped Gelatin Salad
1 1/2 cups cottage cheese
3/4 cup Whipped Topping
3 cups Fruit Cocktail
6-8 Tbsp. Sugar-Free Gelatin Powder
Mix all ingredients together in bowl.
Makes six 1 cup servings
Variation, Here is my version of this dish: sugar-free Pistachio pudding and whipped topping, maraschino cherries, small can of crushed pineapple, some small marshmallows, and put some chopped pecans or walnuts on top.
It is also good with a bit of coconut sprinkled on top, this is one of those recipes than can be made regular or sugar free and with variations makes a beautiful holiday dish that is sure to please.
Low Fat Clam Dip
1 can (6 1/2 oz_ Chopped Clams
1 cup Yogurt Cheese:recipe below
1/2 tsp Worcestershire Sauce
1/8 tsp Freshly Ground Pepper
Drain juice from clams and reserve.
Beat cheese until smooth.
Add Clams, Worcestershire, pepper and clam juice as needed for dip consistency. Serve immediately or chill.
Yogurt Cheese
People who don't even like Yogurt with go back for more when Yogurt Cheese is used. Yogurt cheese is drained yogurt, thicker and more tangy than regular yogurt. Start one day in advance. Set a fine mesh strainer over a bowl. (Line strainer with cheesecloth if the mesh is large.) Spoon in three cups low-fat plain yogurt. Cover and refrigerate overnight. The solid in the strainer is yogurt cheese. The whey in the bowl may be used in place of buttermilk in bread.
I have not tried this recipe although it does come from someone whom I trust very much and get a lot of my reicpes from in the beginning, I am just not fond of Clam recipes.
If anyone tries this please let me know what you think of it.
Strawberry Nog
1-8 oz. carton Plain Low-Fat Yogurt
1/2 cup Skim Milk
1 cup Fresh or Unsweetened Frozen Strawberries
1 Egg
1/4 tsp Vanilla
3-4 Ice Cubes
Equal to taste
Place all ingredients, except ice, in blender container. Cover and blend at high speed until frothy. Add Ice Cubes, one at a time, blending smooth after each addition. Pour into 4 glasses. Serve immediately.
