My Favorite Recipes
I have a collection to share today and some are my favorites and some were collected from friends.
I am in need of some recipes for a get together that is quickly approaching and it is gonna be an "Hawaiian Luau", I know someone out there must have a favorite to share that would be appropriate...thanks and have a great summer..
Pork Chop Casserole
The ultimate weeknight dinner solution! Super-easy Pork Chop Casserole goes together in minutes.
1/2 cup all-purpose flour
6 thick pork chops, rinsed and left damp
3 tablespoons vegetable oil
1 3/4 cups beef broth
1 (10-3/4-ounce) can condensed golden mushroom soup
1 (6-ounce) package long-grain and wild rice mix
1 cup water
Preheat oven to 350 degrees F.
Place flour in a shallow dish; add pork chops and turn to coat completely with flour.
In a large skillet, heat oil over medium heat. Brown pork chops in batches for 5 to 6 minutes per side.
Meanwhile, combine remaining ingredients in a 9- x 13-inch baking dish; mix well. Place browned pork chops over rice mixture. Cover casserole dish with aluminum foil and bake 1 hour, or until no pink remains in pork
Super Moist Pork Chops
1 tablespoon vegetable oil
4 bone-in pork chops, 1/2-inch thick (about 1 1/2 pounds)
1 can (10 3/4 ounces) Campbell'sŪ Condensed Golden Mushroom Soup
1/4 cup water
1. Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook until well browned on both sides.
Baked Rice
Whether with white rice, brown rice this baked recipe is perfect for any meal. Super easy to make and full of flavor, oven baked rice is the perfect go-to dish for any occasion
1/3 cup onion, chopped
2 tablespoons butter
1 cup rice
2 cups chicken broth, or 2 cup water and 2 bouillion cubes
Preheat oven to 375 degrees F.
Saute onion in the butter about 3 minutes. Add rice and stir, cooking just long enough to coat.
Pour in water or broth, mix. Turn into 1-quart casserole, cover, and bake for 30 minutes.
Hobo potatoes
Yummy I can already taste them..
cooking spray
3 bacon slices, cut up
4 cups potatoes, peeled and sliced
1/2 cup chopped green bell pepper
1/3 cup chopped onion
1 1/2 cups shredded cheddar cheese
1/8 teaspoon seasoned salt
1/8 teaspoon pepper
1 teaspoon butter or margarine, optional
Spray one side of an 18 inch piece of heavy foil with non-stick spray coating.
On sprayed surface, arrange half of the bacon to within about 2 inches of edge.
Top with half of the potatoes, half of the green pepper, half of the onion, and half of the cheese.
Top with remaining potatoes, green pepper, and onion. Sprinkle with seasoned salt and pepper.
Top with remaining cheese and bacon. Dot with butter, if you like.
Spray another 18 inch piece of foil on one side. Place it, sprayed side down, atop potato stack.
Seal all edges with a double fold.
Place the packet on the grill rack directly over medium to medium hot coals.
Grill for about 40 minutes or until potatoes are tender, turning the packet once.
Blueberry Raspberry Cobbler
We prefer Blackberry by itself but if I mix I would prefer Raspberry over Blueberry...Try it with your favorites.
3/4 cup fresh blueberries
3/4 cup fresh raspberries
2 Tbls. t 3/4 cup sugar or (splenda)
1 tsp. grated peeled fresh ginger
2 1/2 cups Bisquick Heart Smart baking mix
1 1/4 cup light buttermilk
2 egg whites
2 tsp. vanilla extract
Preheat oven to 350. Coat 1 1/2 qt baking dish with cooking spray. In bowl, toss blueberries and raspberries with 2 Tbs. sugar(splenda) and 1/2 tsp ginger. In Separate bowl, stir together Bisquick and remaining 3/4 cup sugar, stir in buttermilk, egg whites, vanilla and remaining ginger until smooth. Spread half of batter in dish. Evenly sprinkle halt of berry mixture over batter. Top with remaining batter, then remaining berries. Bake 50-55 minutes or until toothpick inserted into cake comes out clean. Cool on rack.
I prefer blackberries instead of blueberries but this is another recipe than can be used with most any fruit or mixture of fruit..
