Christmas Cooking
I love this season but as many others I find myself busy busy busy and running out of time. I have some favorite recipes I use this holiday and going to share some with you.

Traditional Christmas Cheese Ball
1 1/2 (8 ounce) packagescream cheese, softened
1 (2.5 ounce) packagethinly sliced smoked beef, chopped
1 (2.25 ounce) canpimento-stuffed green olives, chopped
1 smallVidalia or other sweet onion, minced
2 dashesWorcestershire sauce, or to taste
1 cupchopped walnuts
Mix the cream cheese, beef, olives, onion, and Worcestershire sauce together in a bowl until evenly blended. Keeping the mixture in the bowl, scrape it into a semi-ball shape. Cover, and refrigerate until firm, at least 2 hours.
Place a large sheet of waxed paper on a flat surface. Sprinkle with walnuts. Roll the cheese ball in the walnuts until completely covered. Transfer the cheese ball to a serving plate, or rewrap with waxed paper and refrigerate until needed.
If I was to not make a cheeseball the kids would think I was crazy or something, we love them..
Reeses Chocolate Peanut Butter Rice Krispie Treats
6 cups Cocoa Krispies Cereal
16-18 Reeses Peanut Butter Cups, diced
5 Tbs butter or margarin
3 Tbs light karo syrup
1 (10 ounce) package plus 2 heaping cups miniature marshmallows
1/3 cup peanut butter
1/2 cup chocolate chips
In a large bowl, combine cereal and diced Reeses. Set aside. Spray a 9 x 13 in. pan with cooking spray and set aside.
In a large pot melt butter over low heat. Add karo syrup and marshmallows and stir continuously until mixture is smooth. Remove from heat and add cereal mixture into the pot and fold together just until cereal is evenly coated. (Peanut butter cup pieces will fall apart as you fold together your ingredients, so don't over mix this.) Press mixture into the sprayed 9 x 13 in. pan. Set aside.
In a small microwave safe bowl, add peanut butter. Microwave for 30 second to a minute to melt. Set aside to let cool slightly. In a separate small microwave safe bowl, melt chocolate at 30 second intervals, stir between intervals, until smooth. Set aside to let cool slightly.
When peanut butter is cool enough to handle, transfer into a small zip lock bag. Clip a small piece out of the corner and pipe onto rice krispie treats, zig-zagging back and forth. Repeat steps with chocolate, placing in a small zip lock bag, and piping over the peanut butter. Either let treats sit at room temperature to allow chocolate to set up, or you can pop the pan into the fridge for about 5 minutes to speed up the process. Cut and serve.
Makes a 9 x 13 in. sheet of treats
This next recipe a friend shared with me this week and she is a great cook who shares a lot of recipes so I am gonna make this myself this weekend...enjoy
No Bake Fruit Cake Recipe
1 lg. box vanilla wafers
1/2 c. candied cherries (chopped) each red and green
1/2 c. candied pineapple (chopped)
2 c. pecans, chopped
1 can Eagle Brand milk
Directions:Crush wafers with rolling pin and mix all ingredients together. Pack into a loaf pan and refrigerate covered w/ wax paper.
Bacon Cheese Potatoes (Slow Cooked)
1/4 pound bacon, diced
2 medium onions, thinly sliced
4 medium potatoes, thinly sliced
1/2 pound cheddar cheese, thinly sliced
salt and pepper
butter
Green Onions (optional)
Line crockpot with foil, leaving enough to cover the potatoes when finished.
Layer half each of the bacon, onions, potatoes and cheese in crockpot. Season to taste and dot with butter.
Repeat layers of bacon, onions, potatoes and cheese. Dot with butter.
Cover with remaining foil.
Cover and cook on low for 10-12 hours.
Make this recipe bigger if you are expecting company. Great to serve for a brunch!
When I get this stuff added with the traditional dishes we will have a feast and have a great time.
